Wine Preservation
Wine that isn’t preserved properly will result in oxidation damage, which results when wine is exposed to air. Oxidation damage degrades the wine by causing the aroma, flavor, and color to change, thus affecting the consumer’s ability to enjoy the wine properly. In as little as 2-8 hours, oxidation can occur upon opening the bottle. The extent of the oxidation depends on how much air comes into contact with the wine when opening and pouring the bottle. In general, white wines and older red wines are more susceptible to oxidation damage. Wine preservation products are intended to reduce the amount of air that comes into contact with wine to prevent or slow down oxidation.
There are several different methods available explained on this website from low cost methods to high cost wine preservation systems. It all depends on how much of a wine enthusiast you are. The most simplest type would to use a wine stopper or to reduce air by putting the wine into a smaller bottle. The most professional systems pressurize the wine bottles and keep them chilled.
